Almond Butter Cups

Who says you can’t makeover candy to add a health boost? Almonds are full of omega-3′s, so pass these out at your next party and give healthy hearts to those you love. This recipe comes to us from Kinzie of To Cheese or Not to Cheese?

Serves 20

  • 1 12oz bag dark chocolate chips
  • 1 cup almond butter
  • 1/4 cup nutritional yeast*
  • 3 tablespoons golden flax seeds, whole
  • 3 tablespoons hemp seeds*

*optional. Nutritional yeast and hemp seeds can be found in the health food section of most grocery stores.

In a small saucepan over low heat, melt the chocolate chips.

While chocolate is melting, mix the almond butter and nutritional yeast (if using) in a small bowl.

Once the chocolate is melted, spoon about 2 teaspoons on the bottom of a muffin cup and spread around the bottom so the chocolate forms a solid layer.

Add 2 heaping teaspoons almond butter to the center of the muffin cup. Top off with 2 more teaspoons  melted chocolate and tilt the muffin cup back and forth to allow the chocolate to melt down each side, covering the almond butter completely. Top with a sprinkle of flax seeds and hemp seeds (if using) on the top.

Place almond butter cups in the freezer for 15 minutes to allow them to harden.
