Apple Cranberry Sauce

Makes 4 servings

This tangy sauce is a great topping for toast, pancakes, waffles, low-fat granola, or whole-grain cereal.

  • 4 large Granny Smith apples, unpeeled, cut into large chunks
  • 1-1/2 cups fresh or frozen cranberries
  • 1/2 cup frozen apple juice concentrate
  • 1 tablespoon sugar

Combine apples, cranberries, apple juice concentrate, and sugar in a medium saucepan. Bring to a boil on medium heat, then reduce to a gentle simmer and cook until the apples are softened, about 10 minutes. Pour the mixture into a blender or food processor and blend until almost smooth – but stop while there’s still some chunkiness.
