Sweet apple and crunchy pecans are mixed with cranberries, cabbage and refreshing dressing. Serve this on the side or atop your favorite sandwich. This recipe comes to us from Chaya of Chaya’s Comfy Cook Blog.
Serves 8
For the dressing:
- 1/2 cup light mayonnaise
- 1/3 cup brown sugar
- 2 tablespoons lemon juice
To complete the coleslaw:
- 16 ounces green cabbage, shredded
- 12 ounces red cabbage, shredded
- 1 small red onion, chopped
- 2 carrots, chopped
- 1/4 cup sweetened dried cranberries
- 1/4 cup pecans, chopped
- 1/4 red pepper, chopped
- 2 apples, chopped or shredded
To make the dressing:
Place mayonnaise, brown sugar and lemon juice and whisk in a small bowl and whisk to combine.
To complete the coleslaw:
Place the green and red shredded cabbage, red onion, carrots, apple, red pepper and cranberries in a large bowl. Add the pecans and stir to combine.
Toss the coleslaw with the dressing and enjoy!
