Applesauce Spice Cookies

(Serves 60-72 cookies)

Ingredients:

  • 2 cups flour
  • 1 cup whole wheat flour
  • 1 ½ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground ginger
  • ¼ tsp allspice
  • 1 cup margarine, softened
  • 1 ½ cups brown sugar
  • 2 eggs
  • 1 cup applesauce
  • 1 ½ cups raisins

Directions:
Combine dry ingredients and set aside. In mixing bowl, cream margarine. Add brown sugar and continue creaming. Then add eggs and applesauce, mixing well. Gradually add dry ingredients and raisins to make dough. Drop by rounded tablespoons onto greased cookie sheet and bake until light golden, about 9-13 minutes.
