Dried apricots are a great way of satisfying your sweet tooth – and getting a burst of nutrition at the same time. Dried apricots are high in fiber, potassium, and other nutrients like vitamin A. They’re also high in antioxidants. This easy dried apricot compote spiked with walnuts is naturally sweet and makes a very versatile dessert. It can be served alone, topped with a dollop of vanilla yogurt, or served as a warm sauce over low-fat frozen yogurt. It can even be used as a topping over fresh fruit such as pears or apples.
- 1 cup dried apricots, sliced
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 2 tablespoons fresh lemon juice
- 1-1/2 cups fresh orange juice
- 2 tablespoons honey
Bring the lemon juice, orange juice and honey to a boil and add apricots and raisins in a small saucepan. Reduce heat to low and simmer just until they become tender and a little syrupy, about 10 minutes. Do not overcook; you want them to still be chewy. Remove apricots and raisins with a slotted spoon and reduce the liquid for about 2 minutes to make a thick sauce. Remove from heat and add apricots, raisins, and walnuts back to sauce. Serve warm or chilled.
