Aspen, CO: The Nation’s First Meatless Monday Community

We’re proud to announce that Aspen, Colorado has become the nation’s first true Meatless Monday Community. With adopters spanning restaurants, hospitals, schools and organizations, Aspen has embraced the MM movement with gusto!

“Our community is deeply concerned about personal health,” says Dawn Shepard, local personal trainer and initiator of the campaign, “we’re very active here, it’s an outdoor community. Health is key. But people have also been surprised to learn about the heavy environmental costs of meat production. We wanted to create a community-wide program to demonstrate that at every point in the day, wherever you are, you can be good to your body and good to the planet!”

The Aspen Meatless Monday program officially launches on June 6th. So far, 20 local restaurants have signed up, include Pyramid Bistro, L’Hostaria, Matsuhisa, Gisella and Six89. They’re joined by a wide range of organizations: Aspen Valley Hospital, Aspen Elementary School, Pathfinders, The Aspen Club & Spa, the University of Colorado School of Medicine, the Aspen Global Change Institute, Komen Aspen and the Cancer Survivor Center.
