On Monday October 1st, The Monday Campaigns teamed up with Everyday Health to present a Meatless Monday Mixer at the Whole Foods Market Wellness Club in New York City. Guests were treated to an array of tasty snacks, learned about going meatless from campaign President Peggy Neu, and had the opportunity to watch live cooking demonstrations by Chef Juan Pablo Chavez and College and Cook Editor, Audrey Scagnelli.
Everyday Health is one of the web’s leading health and wellness portals, offering informative articles, an online community and delicious recipes. Their latest website, Better Eats, includes episodes of Recipe Rehab, a new show that teaches viewers how to make family favorites healthier. This dedication to wellness is precisely why Everyday Health decided to work with Meatless Monday to offer free cooking demonstrations. The event was hosted by the Wellness Club at Whole Foods TriBeca, which offers fantastic community resources like wellness coaching, classes and supper clubs.
For the demonstrations, Whole Foods’ Chef Juan Pablo Chavez created delicious Gingered Apricot Bars with Mango Sauce. The healthy, sweet treat took only a few minutes to prepare and required no cooking or advanced prep! Audrey Scagnelli created a tasty Balsamic Fig Bruschetta that would be the highlight of any social gathering.
