Meatless Monday made its way to NYU’s Langone Medical Center earlier this month. The event was held in NYU’s Big Apple Café and included meatless specials, music, campaign stickers and a cooking demonstration. The promotion was run by Dietetic Intern Erica Giovinazzo, who hopes that Meatless Monday inspires students and staff to start the week with more fruits, vegetables, legumes and whole grains:
“I wanted to do a Meatless Monday event in the NYU Langone Medical Center’s Big Apple Cafe to help open people’s minds (and mouths) to all the benefits of a more plant based diet. I thought I might meet with opposition from some customers, but they were happy to see foods they recognized – like tamale pie and a bean and corn burger.”
Customers were also happy to see Executive Chef Orlando Ramos demonstrate (and sample) a fantastic Rainbow Chopped Salad recipe that they could make at home. Overall, the program was a rousing success; Giovinazzo noted that the one-time event may have spurred enough interest to become a recurring feature on the medical center’s menu.
