In a Today’s Dietitian feature article, “Campus Dining: More Universities Are Serving Healthier Cuisine to Students,” writer McKenzie Hall, RD, reports that college foodservice directors have embraced Meatless Monday in response to student calls for higher quality food and more nutritious meals.
The article in the May edition of the magazine, a monthly publication for dietitians and other nutrition professionals, highlights the rise of Meatless Monday on college campuses throughout the U.S. and Canada.
Hall writes that since Montreal’s McGill University launched Meatless Monday about a year ago, the campaign has been enthusiastically embraced. With feedback from students, McGill’s food and dining service has added a wide array of healthy meatless options, from vegetable stir-fries and grilled veggie brochettes to gourmet paninis and Asian-inspired dishes. “The university’s goal is to give students choices and show them that eating more whole plant foods doesn’t necessarily equate to a large plate of steamed broccoli for lunch,” Hall writes.
Meatless Monday at McGill also reminds students that reducing meat intake is good for their health and the health of the planet, a message that echoes what students learn in the lecture hall.
At Cabrini College in Radnor, PA, Meatless Monday is also thriving, reports Hall. Since launching five years ago, the college has steadily expanded its vegetarian meal offerings and its emphasis on nutrition education. Students now enjoy Make It Monday cooking demonstrations, a Live and Learn speaker series and have access to educational materials, all of which enhance the Meatless Monday message.
As the Today’s Dietitian article makes clear, Meatless Monday has become a crucial part of colleges’ efforts to promote healthier eating, nutrition education and environmental awareness to today’s students.
