Serves 6
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 1 bell pepper, chopped
- 2Â tbsp olive oil
- 1 can black beans, drained
- 1 can navy beans, drained
- 1 can pinto beans, drained
- 1 can red kidney beans, drained
- 1 can garbanzo beans, drained
- 1 16-oz can diced tomatoes
- 1 8-oz can tomato sauce
- 1 small can (4 oz) green chiles
- 3 tsp chili powder
- 1 tsp cumin
- 1 tsp basil
- Salt & pepper to taste
- 1/4 cup dry red wine (optional)
Directions
Saute onion, garlic, and bell pepper in olive oil until soft. Add remaining ingredients. Bring to a boil, lower heat, and simmer for 20-30 minutes.
Serve with shredded cheddar cheese and sour cream if desired.
