Berry Easy Fruit Compote

breakfast_berry_fruit_compote There are few better summer treats than fresh berries from your local farmer’s market or home garden. And one of the very best ways to enjoy them is to heat them just slightly – until their color is intense and they’re really bursting with flavor. This very simple compote is great over lowfat yogurt or a whole-grain cereal in the morning (although you might also enjoy it later in the day, over lowfat ice cream or slices of angel food cake). Makes 4 servings.

  • 1 cup small strawberries, washed and hulled
  • 1/2 cup blueberries, washed and picked over to remove stems
  • 1/2 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • Squirt of lemon juice

Bring maple syrup and vanilla extract to a boil in a medium-sized saute pan. Add a squeeze or two of lemon juice and give it a stir. Next, add the berries and toss in the pan until coated with the glaze and just heated. Serve immediately.
