Broccoli Cauliflower with Pine Nuts & Raisins

Makes 6 servings

For a slightly different twist, you could also drizzle this vegetable side dish with a good red wine vinegar or lemon juice.

  • 1-1/2 cups broccoli florets
  • 1-1/2 cups cauliflower florets
  • 2 cloves garlic, thinly sliced
  • 2 tablespoons raisins
  • 2 tablespoons pine nuts
  • 3 tablespoons olive oil

Put the raisins to soak in very hot water; this will plump them up a bit. While the raisins are soaking, steam the broccoli and cauliflower over boiling water until just tender (about 5-7 minutes). Do not overcook. Drain and put on serving platter.

Heat oil over medium high heat, and sauté garlic just until slightly golden, then add pine nuts and sauté another minute. Pour over the broccoli and cauliflower then add the drained raisins and toss. You may want to add salt and pepper to taste, but that’s not figured into the nutritional facts.
