Buttermilk Waffles

wafflesWhy not start your morning off with fresh, homemade waffles? These are made with buttermilk, which is lower in fat and calories than regular milk.

Makes 6 servings

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 cups buttermilk
  • 1 tablespoon sugar
  • 4 egg whites
  • 1 egg

In a large mixing bowl, whisk together the buttermilk and whole egg. Add the flours, baking powder, baking soda and sugar and stir to mix evenly. In a medium mixing bowl, beat the egg whites until stiff peaks form. Fold egg whites into the flour mixture.

Preheat waffle iron. Spray with cooking spray per waffle iron directions. Spoon batter into waffle iron. Cook for 3-4 minutes or according to manufacturer’s instructions. Transfer to a baking sheet in a 225 degree oven to keep warm until served.
