The Children's Workshop School and the East Village Community School located in the East Village in New York City have already been enjoying Meatless Mondays since October 2009. You can see our schools featured on NY 1 with Manhattan Borough President Scott Stringer at http://www.ny1.com/1-all-boroughs-news-content/news_beats/education/.

NYC parents don't have to wait for the Department of Education to institute Meatless Mondays citywide. They can simply form a nutrition committee at their school, meet with their School Foods Manager and request it. To find out more, go to nycgreenschools.org.

I loved this version. As noted, in the description of this dish, it definitely is NOTHING like Eggs Benedict. Eggs Florentine? Yes!

This is the perfect dish for a late morning brunch. You can assemble everything, including the toast (on the bottom( of a large rectangle casserole and bake it, covered, to the done-ness you like the eggs. Medium-medium well is good for a crowd. Test for the middle eggs to be medium and outer eggs medium-well. For a nice touch, for company, you might like to put a small slice of mexican cheese or some other white chees on top. Also, Italian seasoning adds a great flavor.

Remember quinoa must ALWAYS be rinsed thoroughly before cooking or it will be very bitter, even making eaters sick (quite nauseous). To rinse, I use a paper coffee filter (grains are small) placed inside my regular colander. Rinse repeatedly until rinse water is completely clear and no more soapy-looking bubbles are produced.
