Fava Bean Purée

You know spring is here when fava beans show up at the farmers markets and grocery stores. Fresh fava beans are time-consuming to shell, but well worth the effort!

  • 2 pounds fresh fava beans (in pods)
  • 1 yellow onion, coarsely chopped
  • 6 cloves garlic, peeled
  • salt and pepper to taste

Directions
Shell the beans. Place the beans, onion and garlic in a saucepan with enough water just to cover them. Bring to a boil, then turn down the heat and simmer until the beans are tender, about 15-20 minutes. Pour entire contents of the pot into a food processor/blender and puree. If it seems watery, pour the puree back into the saucepan and heat again until some of the excess water has cooked off. Season with salt and pepper. Serve with toasted pita chips or garnish with mint.
