Fresh Mushroom Paté

Makes 8 servings (about 2 cups)

This is a great spread for crackers or baguette slices. Can be served hot, cold or room temperature. Use any kind of mushroom. Freezes well, too!

  • 1 cup chopped onion
  • 1 clove garlic, pressed
  • 1 tablespoon olive oil
  • 1/2 pound (about 4 cups) chopped fresh mushrooms (buttons, baby bellas, shiitake, or other)
  • 1 teaspoon soy sauce
  • 1 teaspoon savory
  • 1/2 teaspoon thyme
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon black pepper

Sauté the onion and garlic in olive oil. When the onion starts to soften, add the mushrooms and cook over low heat for another 5 minutes. Add the remaining ingredients and simmer for 10 more minutes over low heat. Purée all the ingredients in a food processor or blender.
