Fruity Oatmeal Cookies

oatmeal_cookiesThese cookies are chewy and sweet but still low in fat. Each cookie has just 50 calories and 0.4 grams of fat.

  • 3 cups oatmeal
  • 1 cup whole wheat flour (or 2 cups whole wheat flour with just 2 cups oatmeal)
  • 1 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1 cup unsweetened applesauce
  • 3/4 cup honey
  • 1 teaspoon vanilla
  • 2/3 cup raisins, dried apples or dried cranberries (use chocolate chips if you can handle the extra sugar and fat)

Preheat the oven to 300 degrees. Combine dry ingredients. Combine wet ingredients, mixing well, then add them to the dry ingredients. Stir in the dried fruit last. Roll into small balls and place on cookie sheet, flattening slightly with your thumb. Bake at 275 degrees for 22-25 minutes. Makes approximately 50 cookies.
