(Serves 50)
Ingredients:
- 2 cups whole wheat flour
- 1/3 cup vegetable oil
- 2 cups onion, finely chopped
- 8 carrots, finely chopped (about 1 ½ lbs)
- 8 stalks celery, finely chopped (about 1 lb)
- Salt and pepper to taste
- 4 quarts cooked garbanzo beans –or- 20 lbs (2 ½ No. 10 cans) garbanzo beans, drained and mashed
Directions:
Mix all ingredients except for cooking oil in a large bowl. Form 50 flat patties. Fry in oiled pan over medium-high heat until burgers are golden brown. Turn burgers over and fry on the other side until done.
