This wonderful vegetable side dish will add a blast of garlic – and a boost of vitamin C – to your dinner.
- 2 teaspoons olive oil
- 2-3 garlic cloves, minced
- 2 cups sliced button or cremini mushrooms
- 4 cups chopped broccoli
- 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried)
- Freshly ground black pepper
- A pinch of salt
Heat oil in a large skillet, add garlic and saute for 1 minute. Add mushrooms and saute 2-3 minutes longer, until mushrooms get juicy. Add the broccoli and rosemary and cook another 3-5 minutes, until broccoli is bright green and crisp-tender. Season with some freshly ground pepper and just a little salt.
