Food Network chef Giada De Laurentiis has joined the Meatless Monday movement! The star of Giada at Home goes meatless with her family each week, helping fans to do the same with delicious, produce-packed recipes.
De Laurentiis first showed her support for Meatless Monday in December while tweeting from the set of her hit cooking show. Since then, she has been showing her fans how easy going meatless can be with the meal ideas in her latest cookbook, Weeknights with Giada. The book offers soups, sandwiches and pasta dishes that readers can use to start the week on a healthy note:

It’s got a nuttier texture than rice and is higher in protein, which is great for vegetarian-friendly meals like quinoa with purple Peruvian potatoes, green peas, black olives, fresh herbs, lime juice and a little agave.”
