Glazed Fruit Tart

Add a bright, cheery and healthy dessert to your meal this week.  Substitute fruits to fit the season or what you have on hand.fruit_tart

  • 2 cups Grape-Nuts cereal
  • 3/4 cup apple juice concentrate, divided
  • 2 tablespoons arrowroot
  • 2 cups apple-strawberry juice
  • 3 peaches, sliced
  • 1 pint strawberry, halved
  • 3 kiwi fruits, sliced
  • 30 green seedless grapes, halved

Preheat the oven to 400°F. Mix 1/4 cup apple juice concentrate together with Grape-Nuts. Press into 12-inch nonstick pie pan to form crust. Bake 5-10 minutes, until lightly browned. Let cool completely while you make the filling. Add 1/2 cup juice to a small bowl and slowly mix in arrowroot, stirring continuously as you add so the mixture is lump-free. Heat juice mixture in a saucepan, stirring constantly. Bring to a boil and let boil for three minutes until very thick. Set aside to cool. Arrange fruit in the cooled pie crust, then pour the fruit juice glaze over it. Refrigerate at least 30 minutes.
