Like a good corn muffin in the morning? Try a square of Good-for-You cornbread instead. This great quickbread comes from a collection entitled Heart-Healthy Home Cooking, African American Style. It’s much lower in fat than the average corn muffin, but still moist and delicious.
- 1 cup cornmeal
- 1 cup flour
- 1/4 cup white sugar
- 1 teaspoon baking powder
- 1 cup 1% buttermilk
- 1 egg
- 1/4 cup Smart Balance margarine
- 1 teaspoon vegetable oil (to grease baking pan)
Directions
Preheat oven to 350° F. In a large bowl, mix together dry ingredients: cornmeal, flour, sugar, and baking powder.
In another bowl, combine buttermilk and egg. Beat lightly then slowly add the buttermilk and egg mixture to the dry ingredients. Next, add margarine and mix by hand or with a mixer for 1 minute.
Bake for 20-25 minutes in an 8-inch by 8-inch square baking pan that’s been lightly greased. Let cool and cut into 10 squares.
