Grilled Nectarines with Feta

Nectarines may be unexpected on the grill, but this sure to be a hit at your next potluck. The salty feta intermingles well with the sweet nectarine infused with a hint of smoke. This recipe comes to us from Vivian of Macca’s Meatless Monday.

Serves 8

  • 4 nectarines, halved and pitted
  • 2 tablespoons melted butter of margarine (for brushing)
  • 1 cup coarsely crumbled feta cheese
  • Pepper, to taste

Heat grill or barbeque to medium-high heat.

Brush nectarines with butter and grill, cut side down, for 4 to 5 minutes or until grill marks appear.

Turn nectarines over. Sprinkle cut side with cheese and then pepper to taste. Grill, bottom side down, for another 4 to 5 minutes or until grill marks appear. Enjoy!
