This creamy fruit parfait is good for breakfast – or dessert! The unexpected tang of crystallized ginger will wake up your taste buds any time of day.
- 3/4 cup fat-free milk
- Dash of salt
- 1/3 cup couscous
- 1/2 cup lemon low-fat yogurt
- 1/2 cup reduced-calorie dairy sour cream
- 1 tablespoon honey
- 1/4 teaspoon finely shredded lemon peel
- 3 cups assorted sliced fruit or berries
- Chopped crystallized ginger (optional)
- Fresh mint (optional)
Directions
Peel and slice the fruit and mix with chopped crystalized ginger in a medium bowl. In a medium saucepan bring the milk and salt to boiling, then stir in the couscous. Simmer, covered, for 1 minute. Remove from heat and let stand for 5 minutes. Stir with a fork until fluffy. While the couscous mixture continues cooling, combine the yogurt, sour cream, honey, and lemon peel in a small bowl. Stir into the cooled couscous.
To serve, spoon some of the couscous mixture into each of six parfait glasses. Divide half the fruit topping among 6 glasses, then spoon more of the couscous mixture over the. Top with remaining fruit. If desired, garnish with fresh mint sprigs.
Make-Ahead Tip: The couscous mixture can be made ahead, then covered and chilled up to 4 hours. Fruit can also be prepared ahead of time, then covered and chilled until needed.
