Niktor’s Rootin’ Tootin’ Chili

Serves 4-6

  • 1 15-oz can kidney beans, undrained
  • 1 15-oz can pinto beans, undrained
  • 2 jalapeno peppers, diced
  • 1 cup onions, chopped
  • 2 8-oz cans tomato sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • 1lb firm tofu, drained, pressed and crumbled (or ground meat alternative)
  • 1 cup water

Directions

Combine all ingredients in a crock pot or a large pot. Cook on low heat for 6 hours.
