This cobbler uses the nut to its fullest potential, as walnuts and dates form the crust and for a peach lime cashew filling. Pecans are ground to “crumbs” and then seasoned with cardamom and cinnamon in this no-oven-needed dessert. This recipe comes to us from Karolina of Love Raw.
For the crust:
- 2 cup dates, pitted
- 3 cups walnuts
- 2 pinches salt
For the peach filling:
- 1 cup cashews
- 7 small peaches, peeled, pitted and sliced
- 1 teaspoon lime juice
- 1 pinch salt
- 3 teaspoons agave nectar*
- 3 teaspoons honey
- 1/4 teaspoon vanilla extract
- 2 tablespoons grape seed oil
For the pecan crumbs:
- 1 cup pecans
- 2 pinches salt
- 1 teaspoon agave nectar*
- 1 teaspoon honey
- 1/4 teaspoon cardamom
- 1/4 teaspoon cinnamon
*found in health food stores or the health section of most grocery stores.
To make the crust:
Soak the dates in a bowl of warm water for 10 minutes.
Place the walnuts and salt into a coffee grinder or food processor. Pulse until the walnuts are ground, transfer to a bowl and set aside.
When the dates have finished soaking, add them to the empty food processor and pulse until the dates become a paste. Transfer the ground walnut mixture back to the food processor and process until the walnut date mixture has the consistency of dough. Press into 1 standard pie tin or several small pan tins. Refrigerate.
To make the peach filling:
Place the cashews into a coffee grinder or food processor. Pulse until the cashews are ground, transfer to a small bowl and set aside.
Place the sliced peaches into a food processor, reserving 8 slices for topping the cobbler. Season the peaches with the lime juice, salt, agave nectar or honey, ground cashews and vanilla. Pulse until the peach lime mixture is smooth and creamy. Add the grape seed oil and process for no more than 30 seconds more.
Pour the peach cashew mixture into the date walnut crust(s) reserved in the fridge. Return to the refrigerator.
To make the pecan crumbles:
Place the pecans into a coffee grinder or food processor. Pulse until the pecans resemble crumbs, taking care not to over process to prevent the pecans from taking on a flour consistency. Transfer the pecan crumbs to a medium sized bowl.
Season the pecan crumbs with the salt, agave nectar or honey, cardamom and cinnamon. Stir to combine.
To complete the No Bake Peach Cobblers:
Sprinkle the spiced pecan crumbs over the peach filling in the cobbler(s) in the fridge. Refrigerate for at least 30 minutes more, top with the reserved peach slices, cut into 12 slices and enjoy!
