Poll Shows Patrons are Open to Meatless Monday

Highlighted last year as an up-and-coming 2011 trend, Meatless Monday has certainly left its mark on the restaurant industry. Hundreds of chefs around the country use the campaign to raise health, boost sustainability and create compelling dishes.

A recent poll by real-time reservation site Open Table found that savvy patrons are excited about the initiative as well: 69% of those responding reported that they go Meatless Monday, with an additional 9% saying that they observe Meatless Monday on occasion.
