A few notes:

- We eat EXTREME amounts of garlic in my house. We just love it. I added about 5 cloves of crushed garlic toward the end of the 'sautee the onions' phase. I'm sure at your house you could do with 2 or 3. :)
- This dish comes out extremely visually unappealing. It's a big brown slog, but it's DELICIOUS. I would think about topping it with slices of avocado, diced tomato, and some green onion, just for color's sake, but also because they're good pairings for the chili-flavors here.
- I fricken love KEEN WAH

We're normally meat-eaters at our house, but I've been trying to cut back on red meat and bump-up our whole-grain intake as my husband has recently been diagnosed with diabetes and suffered a mild heart attack. He's a 'meat and potatoes' type guy, so he was leery about trying this chili. We were both pleasantly surprised. The quinoa imparted a very meaty texture to the chili, which was thick and hearty. It had a wonderful depth of flavor, despite the short cooking time (another reason I liked it). My husband actually said he liked it, not his usual "it's okay" comment. I will definitely make this again.

Remember quinoa must ALWAYS be rinsed thoroughly before cooking or it will be very bitter, even making eaters sick (quite nauseous). To rinse, I use a paper coffee filter (grains are small) placed inside my regular colander. Rinse repeatedly until rinse water is completely clear and no more soapy-looking bubbles are produced.
