This recipe comes to us from our friends at the Meatless Monday movement in Croatia.
- 5-6 potatoes (mid-sized)
- 3 carrots
- 1 cup of peas
- 3-4 pickled cucumbers
- 1 tablespoon of lemon juice
- 2-3 tablespoons of vegan mayonnaise
- 1 tablespoon mustard
Cook the potatoes, carrots, and peas.
Cut all the vegetables and pickled cucumbers into cubes.
Add lemon juice, mustard, mayonnaise, and salt.
Stir well to let the mayonnaise bind the ingredients.
Add tofu cut into cubes and two tablespoons of soy or oats crème fraîche to taste.
