Strawberry Spinach Salad

This sweet take on mixed greens balances the honey with cider vinegar and the poppy seeds with almonds. This recipe comes to us from Catherine of Weelicious.

Serves 4

 

For the salad:

  • 5 cups baby spinach, packed (about 5 oz.)
  • 1 cup mushrooms, sliced thin
  • 2 cups strawberries, sliced thin
  • 1/2 cup sliced almonds

For the dressing:

  • 1 tablespoon honey
  • 3 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon salt

Place spinach, mushrooms, strawberries and almonds in a bowl and toss to combine.

Place honey, olive oil, vinegar, poppy seeds and salt in a bowl and whisk to combine.

Toss the salad with the dressing and enjoy!
