Apple may not be the first thing you’d expect to top a pizza, but this is no ordinary pie. Goat cheese sauce, fresh thyme and feta fuse together to show the fruit off at its best. This recipe comes to us from Cathy of A Life Less Sweet.
Serves 8
For the crust:
- 3/4 cup warm water
- 1 tablespoon olive oil
- 1 1/2 teaspoon salt
- 1 teaspoon sugar
- 2 1/4 cups flour
- 1 teaspoon yeast
For the goat-cheese sauce:
- 1/4 cup soft goat cheese
1/2 cup low-fat evaporated milk
1 garlic clove, minced
1/2 teaspoon ground thyme
1/4 teaspoon salt
To top the pizza:
- 1 small apple, thinly sliced (leave peel on)
- 2 onions, caramelized
- 1/2 tablespoons fresh thyme leaves*
- roasted garlic cloves*
- ½ cup feta or fontina cheese
*optional
To make the dough:
Combine water, oil, sugar and salt in a breadmaker pan. Add the flour, and pour yeast on top of the flour.
Put dough in a breadmaker on the “pizza dough” and cook according to package instructions.
To make the goat cheese sauce:
In a small saucepan over medium heat, combine goat cheese, evaporated milk, clove, thyme and salt. Stir while heating for about 3-5 minutes, or until the cheese melts and the liquid simmers.
Cook over medium heat for about 10 minutes, or until sauce is the desired consistency.
With a rolling pin, roll the crust until it reaches desired size and shape.
If you like your crust crispy, prebake the crust for 5 minutes at 425 F adding sauce and toppings.
To complete the pizza:
Preheat oven to 425 F.
Spread a thin layer of goat cheese sauce over pizza crust. Top with caramelized onions, a single layer of apple, thyme, garlic cloves, and cheese.
Bake at 425 F for 15 minutes, or until the crust is browned.
