Savory Southwestern Breakfast Tortilla

Makes 4 servings

Avocado provides many important nutrients for heart health. Enjoy the flavors of the southwest in this easy burrito – and add some variety to your breakfast routine!

  • 4 whole wheat flour tortillas, 8 inch
  • 1 (16-ounce) can fat-free refried beans
  • 1 avocado, pitted and peeled
  • 1 cup low-sodium salsa (go for spicy if you like)

Peel, pit and thinly slice avocado. Warm a nonstick skillet on low heat. Spread 1/4 cup refried beans on each tortilla. Cook over low heat 2-1/2 to 3 minutes until bottom is golden. Add a few slices of avocado and fold tortilla in half. Transfer to a serving dish, then garnish with 1/4 cup salsa and serve.
