Scrambled Tofu with Mushrooms and Peppers

This is an interesting way to prepare tofu. It will resemble scrambled eggs when you add a bit of turmeric for color.

  • 1 medium onion, diced
  • 8 medium white mushrooms, sliced
  • 1/2 green or red bell pepper
  • 1 garlic clove, chopped
  • 1/4 teaspoon sea salt
  • 1 pound soft tofu
  • 1/2 teaspoon turmeric
  • Black pepper, to taste

Directions

Spray a skillet with nonfat cooking spray. Sauté onions, mushrooms, peppers, and garlic, adding the salt as you stir. Add the tofu when the vegetables are tender, and chop it a bit with side of your spatula (so it begins to resemble bits of scrambled eggs). Sprinkle with turmeric and saute a few minutes longer. The turmeric is not jut aromatic, but it will give the tofu a nice yellow color. You can play around with the flavors in this recipe quite a bit. Try adding whatever fresh or dried herbs you have on hand. Serve with whole grain toast and fresh fruit for a complete meal that will really get those brain cells going.
