The problem with cake mixes is that they always tell you to add way too much oil and eggs. But you don’t really have to follow the instructions. You can get good results with just a few small changes that really lighten up the final product.
- 3 egg whites
- 1/3 cup low fat applesauce
- 1-1/4 cups water
- 1 box cake mix
Preheat oven to 350 degrees. Spray your cake pan (or pans if you’re doing layers) with non-stick cooking spray. In a large bowl, beat together the cake mix, water, applesauce and egg whites. Pour into pan(s) and bake according to package directions – or until a toothpick inserted in the middle comes out clean. Cool in pan on rack.
