Meatless Monday is making ground in Syracuse, where St. Joseph’s Hospital has become the latest medical facility to offer weekly options to patients, guests and staff. Reporter Kat De Maria recently sampled the hospital’s Meatless Monday meals for herself, showcasing the campaign on Upstate New York’s Your News Now network.
The team at St. Joseph’s offers an excellent example for other facilities that are interested in implementing Meatless Monday. The hospital’s executive chef creates delicious meatless comfort foods like grilled veggie wraps, stuffed shells and a variety of sandwiches. Nutritional Services Director James Nicolosi is behind the campaign as well, noting that going meatless one day a week is a simple way to transition to healthier options.
De Maria shares that the “staff at St. Joe’s says they’re having success with Meatless Monday so far,” noting that the campaign is about starting the week with a variety of healthy choices, not cutting options from the menu.
