Serves 4
For the salad:
- 5 cups baby spinach, packed (about 5 oz.)
- 1 cup mushrooms, sliced thin
- 2 cups strawberries, sliced thin
- 1/2 cup sliced almonds
For the dressing:
- 1 tablespoon honey
- 3 tablespoons olive oil
- 2 tablespoons cider vinegar
- 1 teaspoon poppy seeds
- 1/4 teaspoon salt
Place spinach, mushrooms, strawberries and almonds in a bowl and toss to combine.
Place honey, olive oil, vinegar, poppy seeds and salt in a bowl and whisk to combine.
Toss the salad with the dressing and enjoy!
