Sweet Fruit & Nut Salad

Makes 5 servings

A sweet and crunchy, citrusy salad that’s refreshing on a hot day.

1-1/2 cups romaine lettuce, chopped
1/2 cup red cabbage, chopped
1 (8-ounce) can pineapple chunks in juice
2 medium nectarines, coarsely chopped
2 medium peaches, coarsely chopped
1 medium carrot, grated
1 tart apple, peeled, cored and diced
1/2 cup celery, diced
1/2 cup chopped nuts (cashews, almonds or walnuts)
1/2 cup orange juice

Drain the pineapple chunks, reserving the juice in a medium bowl. Toss fruits, vegetables and nuts together in a large salad bowl. Add orange juice to reserved pineapple juice and mix well. Pour over salad, toss to coat and let set, covered, in the fridge for 30 minutes.
