Ingredients:
15-20 pounds of sweet potatoes
Canola or olive oil
Directions:
Cut sweet potatoes into equal-sized slices, rub with a little canola or olive oil and spread them onto a nonstick baking sheet, uncovered. Bake at 350 for 30 to 45 minutes, until tender. You can mix in apple slices if desired.
