Sweet Potato Stuffed Apples

As these apples cook, you’ll notice your house filled with a cinnamon brown sugar fruity aroma. Watch as Libby takes us from harvest to clean-up. This recipe and video come to us from sisters Libby and Leah.

Serves 2

  • 2 apples, cored with pulp reserved
  • 16 oz can sweet potatoes, mashed
  • 3 tablespoons almonds, sliced
  • 3 tablespoons brown sugar
  • 3 tablespoons maple syrup
  • 1 tablespoon butter
  • ½ teaspoon cinnamon
  • pinch of salt
  • Aluminum foil

Preheat oven to 350 degrees.

In a medium bowl, mix the apple pulp and sweet potatoes together.

Add the almonds, brown sugar, syrup, butter, cinnamon and salt to the sweet potato mixture. Stir to thoroughly combine.

Scoop a few spoonfuls of seasoned sweet potato mixture into each apple, where the core used to be, until the apple is full. Wrap aluminum foil around the base and sides of the apple so the top is still showing.

Bake for 45 minutes and enjoy!
