Sweet & Spicy Grilled Fruit Skewers

Vanilla and cinnamon add sweetness while chipotle chili pepper and ginger bring an unexpected heat to these grilled fruit skewers. For variety, add sliced star fruit.

  • 1/2 cup brown sugar
  • 1/4 cup rum
  • 2 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground chipotle chili pepper
  • 1 large pineapple, peeled, cored, cut into 2×1-inch pieces
  • 2 ripe yellow bananas, peeled, cut into 2×1-inch pieces

Directions

Stir first 6 ingredients in a small bowl until sugar dissolves. Set aside.

Thread fruit alternately onto 6 double skewers. (We suggest threading fruit onto two parallel skewers to prevent pieces of fruit from spinning around as you turn kabobs!) Brush with spice mixture and let stand 5 minutes.

Grill or broil fruit skewers 10 minutes or until golden brown, basting with spice mixture and turning occasionally. Serve with low-fat vanilla ice cream for a more decadent treat.
