Three-Tomato Bruschetta

Makes 1 serving

Tomatoes aren’t just delicious. A Harvard study has shown just one serving a day of tomato-based foods can lower your risk for heart disease by as much as 30 percent. That’s one hot tomato!

  • 2 slices whole wheat Italian bread
  • 2 pieces sun-dried tomatoes packed in oil, well-drained
  • 1/4 cup diced tomatoes
  • 1 tablespoon low-sodium tomato sauce
  • Season to taste

Toast bread until crisp. Drain and thinly slice the sun-dried tomatoes. Mix with diced tomato and tomato sauce. Add a pinch of dried herbs for seasoning if you like (basil, oregano or thyme works well). Spoon onto bread slices and serve.
