Broccoli Soup with Parmesan Crostini

Potatoes and broccoli make a hearty base for this soup, which gets its kick from onion, garlic and red pepper flakes. Toasted bread is rubbed with garlic and topped with salty Parmesan Reggiano, transforming this straightforward soup into a gourmet experience. This recipe comes to us from Jen of Domestic Divas.

Serves 6

For the broccoli soup:

  • 2 tablespoons extra virgin olive oil
  • 1 yellow onion, peeled and chopped
  • 1 garlic clove, peeled and chopped
  • a pinch of red pepper flakes
  • 4 cups low-sodium vegetable stock
  • 1 medium Russet potato, peeled and chopped
  • 2 heads broccoli, roughly chopped
  • salt and pepper, to taste

For the parmesan crostini:

  • 4 slices crusty bread
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove, cut in half
  • 1/4 cup parmesan reggiano

To make the broccoli soup:


Place the olive oil in a medium pot over medium heat. Add the onion and sauté for 5-7 minutes, or until the onions begin to soften and become fragrant. Season with the garlic and red pepper flakes and cook for one minute more.

Add the vegetable stock, potato and broccoli to the pot. Turn heat up to high and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes, or until the vegetables are cooked through.

In batches, transfer the soup into a blender and puree until smooth. More stock may be added to achieve desired consistency. Return to the pureed soup to the pot and season with salt and pepper to taste.

To make the parmesan crostini:

Toast the bread. Rub the toasted bread with olive oil and the garlic clove halves.

To complete the Broccoli Soup with Parmesan Crostini:

Ladle the soup into bowls. Top each bowl with a crostini. Shave parmesan reggiano on top of every serving to taste. Garnish with a little fresh cracked pepper and enjoy!
