Smokey Tempeh Pear Sandwich

The smokiness of Tempeh bacon transfers to the hearty kale and is balanced with sweet, roasted pear. Any homemade roasted garlic spread you have leftover can be deliciously reused on bread or in wraps. This recipe comes to us from Brooke of Mama Earth Rocks.

Serves 3

For the roasted garlic spread:

  • 1 clove garlic, peeled and sliced
  • ½ cup mayonnaise or vegan mayonaise
  • 1 tablespoon mustard
  • 1 teaspoon apple cider vinegar

To complete the sandwich:

  • 2 pears, cored and quartered
  • 2 tablespoons agave nectar
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 6 leaves kale, carefully washed and torn in half
  • 9 slices tempeh bacon strips, cut in half
  • 6 pieces whole grain bread

To make the roasted garlic spread:

Preheat oven to 350 degrees.

Wrap garlic slices in a small piece of foil and place in oven. Bake for 12 minutes. Remove from oven and set aside to cool.

Place roasted garlic, mayonnaise, mustard, apple cider vinegar and the remaining ¼ teaspoons salt and pepper in a food processor and blend until well mixed. Set aside.

To complete the sandwich:

In a non-stick pan over medium heat, heat 2 tablespoons of the olive oil and the agave for about 6 minutes, or until oil agave mixture begins to bubble.

Toss pear quarters with ¼ teaspoon salt and ¼ teaspoon black pepper. Place in heated oil agave and on all sides for 3 minutes each. Place on a piece of parchment paper and set aside. Store in an oven-proof pan in a warm oven while you assemble the rest of the sandwich.

Heat the remaining 1 tablespoon of olive oil in a large non-stick pan over medium heat. Place the tempeh bacon strips into the pan and cook on each side for 3 minutes. Remove pan from heat, cover and set aside.

Preheat oven to 300 degrees. Put sliced bread cut side up in a pan and place the pan in the warm oven. Heat the bread for 3-5 minutes, or until warm.

Spread roasted garlic spread on one side of each piece of bread. Place 4 pieces of kale, followed by 6 strips of tempeh bacon, followed by 1/3 of the roasted pears on the bottom half of each sandwich. Drop another drop of garlic spread on top and close the sandwich with another piece of bread. Serve warm.
