Zucchini with Sun Dried Tomatoes & Feta

Zucchini is roasted in the oven until tender, then tossed with sweet sun dried tomatoes and tangy feta. Fresh mint’s fresh flavor balances the savory, sweet and salty in this Summer squash side dish. This recipe comes to us from Jen of Domestic Divas.

Serves 4

  • 4 cups zucchini, chopped
  • 2 tablespoon olive oil
  • salt and pepper, to taste
  • 1/2 cup sun dried tomatoes, julienned
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh mint, chopped

Preheat an oven to 450 degrees.

Toss the zucchini and the olive oil together in a baking dish. Season with salt and pepper, tossing again to ensure that the salt and pepper is evenly distributed. Roast in the oven for about 20 minutes, or until tender.

Toss the zucchini with the sun dried tomato slices. Crumble the feta over the tomatoes and zucchini.

Taste for seasoning and add additional salt and pepper if desired. Divide into 4 servings, sprinkle the mint on top and enjoy!
